Classic "New York" Cheesecake Recipe

Ingredients
1 ½ cups graham cracker crumbs
¾ cup sour cream (20% fat)
3 large eggs
4 cups cream cheese (such as Philadelphia)
⅓ cup unsalted butter, melted
1 cup powdered sugar
3 tablespoons all-purpose flour
1 egg yolk
Pinch of vanilla powder

Instructions

  1. Preheat the oven to 350°F (180°C). Crush the graham crackers in a food processor and mix with the melted butter until combined. Press the mixture evenly onto the bottom of a 9-inch (23 cm) springform pan. Bake for 10 minutes, then remove and let cool.
  2. Meanwhile, in a large bowl, mix the cream cheese and powdered sugar until smooth. Add the sour cream and flour, and mix again until well combined.
  3. Gradually add the eggs one at a time, followed by the egg yolk and vanilla, mixing well after each addition until the filling is smooth.
  4. Pour the filling over the crust and bake for 45 minutes at 320°F (160°C) until the center is almost set. Let cool completely before serving.
